Whereas all of Jérôme Billard’s other Chinons are fermented in the domaine’s new, state-of-the-art winery, his Pierre de Tuf cuvée starts life in a single ‘tuf’ limestone vat in the old winery before being aged in double-sized, old, oak barrels. This winemaking enhances the wine’s rich, fleshy palate and complex flavours. Mid ruby colour, aromas are multi-layered, combining sweet cassis with meatier, herbal notes. This is a full, intense, concentrated mouthful, with good stuffing, fine structure and ripe, supple tannins. A beautifully balanced, elegant Chinon.
