Daughter of biodynamic pioneers Pierrette and Marc, Sophie Guillemot-Michel is a vital part of the team at the family domaine. This 100% Chardonnay sparkling wine is her most recent addition to their creations, the 2016 being her third vintage. It was made by the “methode ancestrale”, whereby alcoholic fermentation commences in tank but the wine is bottled mid-fermentation, which is subsequently completed in bottle. Carbon dioxide is naturally trapped inside the liquid without the need to initiate a secondary fermentation by adding sugar (used in the champagne method). This is a precarious method of making sparkling wines, but Sophie seems to have got the hang of it! Pale lemon colour, bubbles are tiny and vivacious, aromas being clean and lemony. Full, silky and cleansing on the palate, this is a fully sparkling, energetic, zippy mouthful. The finish is crisp, precise and more-ish.
