Bodegas Hidalgo was established by the Hidalgo family in 1792 and is still owned and run by the eighth generation today. At present, they use only grapes grown in their own vineyards to make their wines. La Gitana is their most famous wine, named after a gypsy barmaid who captivated her customers, Eduardo Hidalgo in particular, who decided to call the family Sherry after this exotic femme fatale. 100% Palomino Fino, from vines planted in Albariza soils in the `Manzanilla-Sanlucar de Barrameda` Denomination of Origin, this is a bone dry, lightweight, crisp Sherry style, flavours recalling green olive, salted almonds and green apple. “I recommend drinking this with anything that swims,” we were told by Fermin Hidalgo. Indeed, this is a refreshing, finely textured aperitif, and delicious paired with seafood.
