These Pinot Noir grapes come from a 45-year-old vineyard. They were 100% de-stemmed, then held at low temperature for five days, prior to the start of fermentation, to encourage gentle extraction. The wine has aged in small barrels, of which 20% were new. En Choué is one of the last vineyards to be picked each year, as it lies on high terrain in Russilly. Colour is medium deep, ruby purple, aromas tight yet intensely fruity. Palate shows fine freshness, medium body and supple length (for drinking 2024-2028+).
