Diatomists Amontillado, Jerez de la Frontera, Singular Botas NV

Bright golden amber in colour, the nose is intense, recalling dried apricots and fresh almond patisserie, with an attractive hint of green olive. Aged 12 years in bota, and 100% Palomino, the palate is structured, bright and energetic, with layers of flavours, nutty complexity and creamy texture. The finish is long, clean and dry. We recommend serving this slightly chilled with charcuterie or cheese.
